“We are excited about the changes we are making at Rustik Bistro!” (formerly known as Carey Rd. Bistro), shared Owner, Tracey Hebden.
Located on Carey Rd, at the confluence of Carey and Glanford Avenue, they are attached to the Six Mile Bakery – so all baked goods will be same-day fresh!
Opening during the summer of 2016, they will quietly launch and late in August or perhaps September Rustik’s grand opening will take place.
For now everyone is hard at work re-doing the cafe into a rustic, eclectic, slightly Mediterranean and somewhat bohemian bistro with a relaxing, put your feet up environment.
The concept is primarily Hebden’s. She is co-owner of Six Mile Bakery along with sister Deb.
“We wanted to offer a fun environment that is relaxing, conversation-friendly and…well…rustic in style. The menu choices are a broad range of items that cater to those travelling to work or home along McKenzie, Carey, Glanford or the Trans Canada and would like to pick-up something quickly, but something that is made fresh while offering unique twists on traditional far,” said Hebden.
“We are also making the location dog friendly, by putting in a dog-run area, next to the outdoor seating. For all the dog walkers out there who would like to stop in and grab a coffee, we can do that.”
There will be a funky layout of mixed furniture styles, some of it collected from the iconic Bengal Lounge in the Empress Hotel, some hand-picked from various markets. The atmosphere will offer a relaxing environment for everyone with free Wi-Fi, books, magazines and conversation-friendly seating.
Rustik is also all about food choices. In some cases Rustik will have locally grown, organic vegetables, or their own fresh baked product and many individually sourced products to enable them to provide a broad range of appetizers, entrees, desserts and refreshments, including gourmet Italian coffee, roasted fresh and local.
